It’s truly as good as it sounds. A homemade dip is a total game changer for entertaining. People just love dips! They love how easy they are, they add a bit of curiosity, they are usually unexpectedly amazing, and hey, at my house? You can dip whatever the heck you want into the dip, do I make myself clear?
This whipped feta dip is sooo easy to make and comes together literally within 15 minutes. It’s fresh, it’s lemony, it tastes like you’re propping your feet up while in Greece — and it’s a great patio bite with some homemade spiced chips.
- 8oz of softened cream cheese
- 6-8oz of crumbled feta
- 3-4 cloves of garlic, grated
- pinch of red pepper flakes
- 1 zest of a whole lemon
- juice of 1/2 lemon
- olive oil – maybe 4 tbsp at most
- garnish: chives, more zest, olives if you’re a fan, and a healthy drizzle of olive oil!!
Using a microplane, grate your garlic cloves directly into a small skillet with about 2tbsp of olive oil. Add your pinch of red pepper flakes, and saute the garlic on medium heat for 1-2 minutes. Just make sure to not burn it!
Allow your cream cheese to come to room temperature — give or take 20 minutes. In a medium bowl, add your cream cheese, crumbled feta bits and the garlic/olive oil together. Mix with a spoon, until well combined and the texture becomes spreadable.
Next, add your lemon zest and lemon juice, another tbsp of olive oil, as well as a dash of salt and pepper for taste. Mix again — taste test — and serve that bad boy UP with your fave garnishes.
This dip is best when it isn’t too cold, otherwise it doesn’t stay dippable! Serve with veggies or pita chips, and it becomes a perfect patio bite for the afternoon…or a meal…your call. ;’)
Peace and good eats guys, -A❁
