We’ve made it to Day 12 foodie friends!!

What a fun writing and cooking challenge this has been for myself and for my family and loved ones who got to “test-drive” some of the recipes along the way with me. Some of these recipes were obviously not only to be used JUST for the holidays, but can also be relied upon time and time again when you’re looking to entertain, if you’re in the mood to bake bread on a gloomy day, and honestly if you feel like splurging on a regular Friday night.

I hope all of you have also recognized the much needed R&R time that is needed by everyone as we wrap up the end of December and this crazy year that became 2020. I’ve loved interacting with so many of you, some new faces and some friendly faces, and hope that no matter how you are celebrating the end of this year, to have a wonderful Christmas and holiday with your families, friends, and loved ones (as safely as possible)!
Oh yeah, and start your Christmas morning off right with a couple of these pancakes. You’ll have a happy household — guaranteed!

INGREDIENTS

  • 1 1/2 cups of flour
  • 1 tbsp of white sugar
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 1 1/2 cups of milk
  • 1 egg
  • 1/2 tsp of vanilla
  • 3 tbsp of vegetable oil + extra for the pan, if needed

In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the egg, milk, vegetable oil and vanilla and then pour over the dry ingredients and whisk together also.

Begin to heat your non-stick pan on medium – high while you let the mixture sit for a minute. If you don’t have a non-stick pan, consider taking a little bit of vegetable oil and coating the bottom of the pan BARELY. No oily pancakes!!

Next, using a 1/4 measuring cup, create little dollops of pancake batter in the pan and cook for 2-3 minutes per side, waiting for the rounded edges of the batter to curl under and for bubbles to form on the surface of the pancake before flipping it.

Serve with reaaal Canadian maple syrup, icing sugar, fresh fruit, or even some leftover raspberry sauce (it’s pretty delightful).
