
INGREDIENTS
- 1 medium yellow pepper, finely chopped
- 1/2 red onion ” ”
- 1/2 cucumber ” “
- 2-3 roma tomatoes ” ”
- A mix of chopped cilantro, parsley, mint (if you can find)
- Zest and juice of 1 lemon
- Olive oil
- S + P
Combine all the ingredients in a medium bowl. Add the zest and juice of the lemon, a drizzle of olive oil and a small amount of salt and pepper to season. You’ll be left with an extremely refreshing, light, and herby salad to pair as a condiment or side salad to any dish.
