Israeli Salad


  • 1 medium yellow pepper, finely chopped
  • 1/2 red onion ” ”
  • 1/2 cucumber ” “
  • 2-3 roma tomatoes ” ”
  • A mix of chopped cilantro, parsley, mint (if you can find)
  • Zest and juice of 1 lemon
  • Olive oil
  • S + P

Combine all the ingredients in a medium bowl. Add the zest and juice of the lemon, a drizzle of olive oil and a small amount of salt and pepper to season. You’ll be left with an extremely refreshing, light, and herby salad to pair as a condiment or side salad to any dish.
