Sheet Pan Loaded Fries

The first time I made these, I don’t know why, but my brain automatically thought, “These would be badass on Boxing Day.” Boxing Day reminds me of eating junk food, having a casual drink at home or at an ugly-sweater party, and relaxing while watching Netflix episodes of Friends.

On a totally unrelated note, I love everything that goes on a loaded baked potato. It’s sort of like nachos, or pizza, where there’s an endless number of topping options but you totally love the classics too. I don’t know why I wanted to make loaded potato-style french fries in the first place…but then I added poutine gravy over top and I stopped thinking altogether.

Nothing about this recipe makes sense… but I bet it would be the perfect thing to eat on a lazy Boxing Day night.


  • Straight, thick cut fries.
  • 1 packet of poutine gravy
  • Green onions, chopped
  • 5 large mushrooms, chopped
    (+ optional, if you’re a mushroom h8ter)
  • Old cheddar cheese, buy the brick when it’s on sale and shred yourself
  • Bacon bits, fresh or store-bought, doesn’t matter
  • Sour cream
  • Vegetable oil + Salt and pepper

1.Preheat oven according to french fry instructions. In the meantime, cut up your mushrooms, green onions, and shred your cheese for assembly. Lay the fries over parchment paper on a baking sheet and cook according to package.

2. Saute your mushrooms (in a tablespoon of unsalted butter if you have, but vegetable oil will work well too) until browned and crisp — allow the moisture to evaporate to achieve that golden colour.

3. While mushrooms are cooking, make poutine gravy according to packet and keep in the “warming zone” of your stove-top if you can, whisking once in a while so it doesn’t clump up.

4. About 3 minutes before the french fries are done, pull from the oven. Using a spatula, push the fries into a mini mountain of deliciousness and spread half of the cheddar cheese evenly over top, a sprinkle of bacon bits and the mushrooms. Put back into the oven to melt.

5. Once timer has gone, pull from oven again and spread the remainder of the cheese again. Return to oven until melted once again.

6. Lastly, remove from oven, sprinkle green onions over top, spoon the gravy over strategically to not end up with soggy fries, and then spoon little mountains of sour cream and more bacon bits. Slide the parchment paper onto a plate or leave on the baking tray.

Enjoy selfishly alone in your bedroom (jks) or share with friends!!
