Homemade Caesar Dressing

I know it’s easier to just buy Caesar dressing but my goodness, this version from scratch tastes noooothing like store-bought, and it really doesn’t take that much effort to make either. Highly recommend as a dressing, but also works as a french fry dip, or a sandwich spread (omg, just thought of that and died a little inside).

INGREDIENTS

  • 1/4 cup of mayo
  • 1/4 cup of grated parmesan cheese
  • 2 tbsp of olive oil
  • 1-2 clove of garlic, finely minced
  • 1tbsp of either white wine or apple cider vinegar
  • 1 tbsp of Worcestershire sauce
  • 2 -3 tsp of dijon mustard
  • fresh cracked pepper and salt to taste
  • optional: 1 tsp of minced anchovy paste AND a little oil from the jar
    (if you’re a lover, you’ll say yes 100% and if you’re a h8ter than nobody likes you, oops)

Combine all the ingredients together and then taste, taste, taste. Although I start with this recipe, some days I want a little more acidity from added lemon juice, other days I prefer to really get that umami flavour bomb that comes from the Worcestershire sauce and anchovy paste. Also, this dressing can take quite a bit of black pepper to off-set the acid and richness so don’t be afraid to really go in on seasoning.

Set aside and serve right away, or keep in the fridge until ready to use.. and oh yeah, you may want to double this recipe to have extra throughout the week because I’m telling you; once you have this homemade version of Caesar, you will never even look at regular salad dressing the same way.
